It changes every day. But, if I had to pick one, I'd say Gimme Shelter. It's as close to perfect as any rock song ever written.

Its not an all out guitar song but it just gives me the "shivers" everytime I listen to it.
The following lyrics are what make the song for me.

i love gimme shelter (+1!) and you can't always get what you want
but it does tend to change from time to time, but the only song i can't get tired of is Paranoya key of E - Lou Reed
