when I'm not practicing guitar or playing with my band I am a lead residential drywall finisher also do a little painting for a living but I'm going to start training to be a fender silver certified tech with our best local lutherie that is now in his 70s so my town needs a new good tech I'm also going to start building pedals and maybe tube amps on the side. for fun i go disc golfing and hiking in parks with my wife while she shoots 100s of photos. i also have 5 fish tanks with african cichlids in them and last but not least watch iowa hawkeye football and Bball. hence the name stratohawk. oh yeah and pearl jam concerts

Here you go:

This recipe is for 1 1/2 to 2 lbs of beef. I use Eye of Round.

In a deep pot that has a lid.

2 Cans of Mexican Ro-Tel

2 Tablespoons Chili Powder
1 Teaspoon Ground Cumin
1 Teaspoon Cilantro
Beef Broth and Chicken Broth (1/2 and 1/2, enough to completely cover the meat)

Put the lid on the pot so that it is slightly open. Cook on Medium/High heat for about 4 hours.
Pull meat from pot. Cut into sections about 3 inches long. Shred with a fork. Return shredded meat to pot and simmer for 1 hour.

Make Burritos using Flour tortillas, shredded beef, shredded lettuce, shredded cheese. If you like sour cream, guacamoli (sp) or whatever else add it.


This same recipe is also good with with Chicken and Pork.


Sounds sort of like mine but I roll them up, put them in a baking dish, put more shredded cheese on top, then pour a mixture of enchellada sauce and brown gravy over it and pop them in the over for awhile.

I get many requests for my Shredded Beef Burritos.
I've tried your shredded beef. I can't get Mexican Rotel around here so I substituted with jalapenos in LaMorena sauce and Embasa mex salsa. It turned out QUITE well. Thanks!!! :)

I like to cook in my spare time as well, also like to cycle quite a bit. :)

I spend most of my free time coaching fastpitch softball. I'm an assistant coach at the high school, plus I coach a summer league team and a summer tournament team. Outdoor practice & games begin in April and goes through the end of July. Indoor training & practice begins in September and goes through March. The best part of all this is that I coach both of my daughters and spend tons of time with them.

I have too many hobbies and not enough money to support them! Music, Food (gotta have money to eat!), breaking and fixing Jeeps, restoring old cars, building PC's, Women (never enough money for that!!!). There's just not enough hours in the day. I have to make myself go to sleep.

As like Chet, I was disabled on my job too. So most of the day I either play the guitar or do some Artwork and that helps pass my time.
