When not playing or talking about guitars, I am currently going back to school to go from my LVN/LPN license to a RN degree.

If I told you guys my Shredded Beef Burrito recipe I'd have to kill you........

Just kidding.

Here you go:

This recipe is for 1 1/2 to 2 lbs of beef. I use Eye of Round.

In a deep pot that has a lid.

2 Cans of Mexican Ro-Tel
3 Tablespoons Red Wine Vinegar
2 Tablespoons Chili Powder
1 Teaspoon Ground Cumin
1 Teaspoon Cilantro
Beef Broth and Chicken Broth (1/2 and 1/2, enough to completely cover the meat)

Put the lid on the pot so that it is slightly open. Cook on Medium/High heat for about 4 hours.
Pull meat from pot. Cut into sections about 3 inches long. Shred with a fork. Return shredded meat to pot and simmer for 1 hour.

Make Burritos using Flour tortillas, shredded beef, shredded lettuce, shredded cheese. If you like sour cream, guacamoli (sp) or whatever else add it.

This same recipe is also good with with Chicken and Pork.

Big props to Chet - I just made this last night with pork shoulder and served it fajita style with sauteed onions/peppers, tortillas, cheese, and sour cream. The wife approves it as a "make again" recipe!

Only change I made was to first brown the pork on all sides in some olive oil. The pork also only needed 4 hours to become fall of the bone/fall apart tender and I kept the heat to a simmer.

Tried this out over the weekend only I smoked a Pork butt for it. It came out really good. I'm trying the original recipe next weekend knowing that it will come out very nicely as well. I also smoked some Jalepenos (Chipotles) to add for those with a hankering for some more heat.
