I've been playing a bit more than a year now and my fingers don't have any calluses on them. I play very frequently, and when I do get a callus, the skin where its at literally sheds and turns soft again.

What kind of problem could this be? Could my type-1 diabetes be part of the cause? :?

Are you playing electric, classical, or an acoustic type guitar strung with metal strings; "Silk and Steel" style strings (for acoustics) are also very easy on the fingers.
These guitar types play pretty easy so far as effort to fret a note primarily due to the lower string tension and material used to wind the (sometimes 3rd) thru 6th string. Even plain unwound strings can cause calluses.
As far as peeling goes thatis normal for me and most every guitar player I know; the calluses going away may be a sign of not playing enough to maintain them. I don't get them from electrics much but the acoustics oh yeah! but I switch a lot so my fingers are just generally "tough" and most times I don't USUALLY have calluses. Playing acoustics for very long makes me wish I played more cause I don't have the calluses.
I do get them on the BACK of my hand (knuckles) from being on my hands and knees so much at work painting. I use my fist to hold me up instead of the palm down method cause my wrists don't bend very far in that direction.
As far as your type 1 goes I'd ask your doc about that.

This happens to me when I surf. Do you spend a lot of time in the water? Or maybe you take long showers?

Playing acoustic with heavy strings wil aleviate the problem.

I had calluses as a kid and my fingers hurt after 45 mins or so of playing. Today I don't have any at all and I can play for hours. Don't know why.

Doesn't hurt when I play either. I sat and played for about an hour and a half a little while ago and the only thing that got tired was my pick-arm because it was getting stiff. Life is odd that way, right?

I had calluses when I was younger, but not anymore. I can play as much as I want with no problems.
