Good poll, Matt.

I never drank much coffee, except for the odd camp morning, until I quit smoking in my early 40s. That became my go to habit replacement and breakfast drink, and I couldn’t keep eggs in my stomach until I was almost 30. I love both today.

As for today’s breakie, it’s toasted out of town bakery gooey Saigon cinnamon bread like no other I’ve found. It comes to a store within walking distance and goes great with coffee. That’s why I freeze six loafs at a time when they arrive and go as fast as they come.

My wife spoils me with pan fried potatoes and eggs Bennie on toast when she doesn’t present me with pancakes and basted eggs on top with maple syrup. Real Canadian Light (less sweet and smooth) when available of course, before the dark comes along. We changed back from margarine to real butter.

I have made oven baked crispy topped apple/cinnamon pancakes, but not for some time.

I’ll make French omelettes for us from time to time by whipping the egg whites first and folding in the yolks. This makes them rise and fluffy.

No quiche need apply. :wink:
Try this easy peasy decades old recipe I have made for some time.

Amended version;

You’ll need ramekin bowls or something similar. I suppose a cup would work or other similar cookware.

You’ll need one egg per serving at that size serving plus one or two for the mixture that follows:


In a large bowl:

1) Dice and toss broken up bread pieces or croutons (I estimate about 1/2 - 3/4 cup per serving. I use torn bread.
2) Add some thinly sliced mushrooms, diced green pepper, diced onions (green optional), ham or other cold cut pieces (shaved or otherwise), torn cheese slices (I use cheddar, but your choice will work).
3) Beat one or two eggs (just enough to wet and bind the crumb mixture ) with a pinch of dry mustard and pepper. Add to the mixture. Don’t mush the mixture just more or less toss it until mostly covered with egg. Option: Add the dry mixture to the ramekins/cups/bowls and pour the beaten egg over top of each following the next step.
4) Grease ramekins or other with butter and fill them about 3/4 with the tossed mixture. You can lightly pack them down if need be, but not too much. (Here you can pour the beaten egg on top of each need be). Leave enough room for the next step.
5) Add a whole egg to the top of each serving. Lightly pierce the egg yolk with a toothpick or small fork or similar (perfectly common) to prevent it exploding. You might want to put plastic wrap with some opening over the dish if cooked in the microwave. Don’t worry, the plastic wrap will help to steam and cook the egg. In fact the adventurous often omit the piercing and it can work as long as you moniitor it. Or pour a scrambled egg mixture over the mix instead. Or omit the egg on top . . .
6) Sprinkle paprika and/or hot sauce on top
7) Cook about 45 seconds till the top of each egg is done using the microwave. This could be cooked for a short time in an oven, but I can’t say for how long at what temp,

Option: Serve with Parmesan cheese.

The amount of each ingredient is not listed as you can add or omit according to taste or preference. You could also cut back and simplify with Fergasa bread, but I found the first method tastes best. YMMV.

There ya go. Ham and eggs, omelette, and toast wrapped into one. :D

I'm a breakfast man, for sure.

I'll choose either of those options, on occasion, but here are my staples:

Some days, I'll stick to coffee, lots of it, I mean MANY cups. With a bit of sugar, no cream or milk. My main choice if I'm hungover.

Other days I'll have the good old scrambled eggs, bacon and bread. With or without avocado/tomato/cheese thrown in.

I never do Benedict myself, but I choose it whenever I'm out for breakfast, mostly after gig nights.

BUT

One of the very few things that make me feel good about being alive definitely is the first bite of leftover pepperoni pizza right out of the oven. Pizza and coffee for breakfast is one of mankind's greatest reasons of existence.

You may have missed the point, Sergio.
It's not about what you usually have.
It's about your best, most favourite special breakfast for special occasions.

That said, I will follow up on your response with a trick I do.
Leftover pizza is something I have for breakfast about once a month or so but I like to reheat it.
Here's my pizza reheating trick:
Nuking it usually makes it soggy and I don't like that.
First, I put a skillet with a lid on the stove and turn it on to medium-high heat and let it warm up for a couple of minutes.
Then I put some pizza on a plate and nuke it for about 1/2, maybe 2/3 of the time it would normally take to heat it up to an appropriate temperature.
Then I slide it into the preheated skillet, put the lid on it and set a timer for 2 or 3 minutes, depending on how fast/hot the stove is.
The skillet re-crisps the bottom so the texture is closer to when it was first made.
Once I discovered this method I never reheat pizza any other way now.
I have tried bypassing the nuke and just doing the whole time in a skillet and that doesn't work.
By the time the pie is heated all the way through, the bottom is very close to being burnt.
Too dry and hard.
Try it next time.
I think you'll agree it's the best way.

One caveat; I've never tried this on a New York Style pie with the really thin crust and the big wide slices that you fold in half so it doesn't flop around.

I forgot to mention, Mark, I use a non-stick coated pan.
I think a bare stainless pan might stick to the pie and I'm just not a big fan of Pam.

No, I got the point, it's just that those are my favorites.

P.S. nice reheating system, I don't think it'll be any bad with New York style pizza, which is what we normally have here.

Day after Thanksgiving or Christmas I use leftover dressing and make an omelette. Dressing consists of Pepperidge Farm cubed sage stuffing, sausage, onions sautéed in butter, mushrooms, celery, turkey broth, and baked in a casserole dish (Usually not enough room to stuff it in the turkey.) (Even though I live in the south, I never acquired a taste for cornbread dressing.)

If I'm going out, then Eggs Benedict, or Steak & Eggs, with grits and toast. (I did acquire a taste for grits.)Steak rare, eggs sunny side up, toast to sop up the runny yolks left on the plate.

Normal day, fried egg sandwich on toast with ham and melted cheese.
