For years I have intended to explore wiring up a set of pickups for one of the Stratocaster clones I have built. I have a set of Fender 57/62's on a pick guard waiting to be wired together. Since these are a "classic set" I figure the 250K pots are the appropriate parts? How do 500 K pots alter the sound?

I have both 3 and 5 way switches and debating going with the old 3 way.

500K pots will keep single coil pickups with more brightness .

3 way or 5 way, is only for more option or less option

The old 3-way will remove the "natural" slot position providing neck/middle and middle/bridge that is popular (and humbucking)
Unless you never play with two pickups together, there's no advantage to the 3-way other than "authenticity" of a pre-1976 Clonecaster.
Before 1976, players would either replace the 3 way with a 5 way, or they'd balance the switch in the "in between" positions.

500k pots are generally used with humbuckers because 250k pots tends to bleed off too much treble and make them "dark" sounding. As Stratele52 said, using them on single coils will brighten them up.

I have never cared for the sound of the 2 and 4 position, and actually the middle pickup is to me worthless. I am tempted to just go with neck and bridge, with bridge wired for tone control.

So basically the "Delta Tone" but with a 3-way.
I do prefer that tone wiring, as I rarely, if ever, use the middle pickup alone, but I use the mid-neck quite often.
