Can you make a Fender Strat made from alder wood sound like a guitar made from Mahogany with a equalizer?

Considering that the wood has very little to do with the amplified tone of a solid body guitar, I'm going to go with "Sure"

I played for years without an EQ pedal.
The only reason I bought one was to do a giant mids push in an attempt to do a Boston Tom Scholz sound.
Once I got used to it and how much value it has I never play without one anymore.
A 10 band is preferable but a 6 band will also work.
I bought the programmable one with 4 user slots for presets from Source Audio.
I like being able to toggle through 4 settings with a toe tap.

As to whether it sounds like mahogany, well that is in the ear of the listener.
If you mean mahogany, set neck, twin bucker then no.

There’s a few things you can do to get a darker and beefier tone from your Strat while still using single coils.

Run an Xotic EP Booster as the first pedal in your chain.
Run an EQ pedal last in your chain.
Get some steel plates for mounting under your pickups from Lindy Fralin or...
Get some steel pole pickups from Lindy.
