I'm often finding guitars in the local music store that I like and want to add to the collection. The issue is that I'd like to compare guitar tones between two or three guitars, so as not to get a similar guitar to what I already have. but once I've played them they all start sounding very similar. Is there a way to objectively compare tones to see if there is a noticeable difference. I was thinking of recording the guitars then listening but any suggestions on how to compare tones in store or at home would be appreciated!

Recorded sound can be compared with ABX tests, and visual inspection and comparison of spectrograms.
Most good DAWs will have plugins for both.

But yes, most guitars will probably converge towards "your sound" - you unconsciously alter attack and other factors to sound more like what you're used to. They'll still sound different, but less so.
Ritchie Blackmore on a guitar without his special tone circuit will still have more of the Blackmore sound than anyone else on a guitar with it, and the more he plays, the more pronounced it becomes.
