Actually, I've seen concert footage when he's had more than one on stage.
I dunno, maybe he's just really picky about his state of tune.
We already know he's pretty choosey about the rest of his gear.
You don't get Pete Cornish to build you a bunch of different boards on a whim.
Or perhaps he got used to using them for whatever reason and now that's just what he's comfortable with.
Could be a number of reasons.
Also, he's getting on in years .... and he's English.
I think it's safe to say Britons have a slightly different view than we and as we age we tend to get set in our ways.
I'll cut him a ton of slack if a little eccentricity pops up from time to time.
He's always been one of my all time favourite guitarists.

Not that I think your question was meant to be disparaging.
Just thinking out loud.

I'm certainly no Gilmour, but I have an analogue (with a physical needle) tuner that I glance at when doing slow bends. The digital tuners are just too slow and jumpy for that use.
Perhaps the esteemed guitar god does something similar with the strobotuner?

You should try the PolyTune.
It's pretty darned accurate and isn't jumpy.
I must have 7 or 8 tuners and 3 of them are TC.
One PolyTune and two PolyClips.
The TCs are so good they've become my go-to tuners for everything and I'm a stickler for good tune.
I'm even considering selling my two Petersons.

I have a Polytune, and I understand that many love it.
However, for me it's unusable for monitoring purposes, for several reasons:
- It mutes passthrough while tuning, so there's no way to use it while playing without adding an ABY or other splitter.
- It doesn't work well unless the guitar volume is rather high, which isn't necessarily the case while playing.
- For me, it is jumpy. I just tried bending while it's on, and when passing slowly from one named note to another (say, from A to A#), it blinks directly from one set of LEDs lit to another and back without going through intermediate steps.
- Or it jumps to chord mode automatically while bending if it detects two or more notes within a short time. Which is what it does if you do deep bends. Then there's several seconds before you get the single note display back.
- There's no markings for what each LED means. There's no way to tell exactly how much you're off - only the direction and a vague "close"/"far off".

It's great for tuning to exact half note steps in equal temperament, modern pitch. That's what it's designed for, and it excels at that.

However, I prefer use a $9.99 Tascam LED tuner, because I can see how much I'm off, and it lets me tune a string to, say, 14 cents low, like if I want to tune to a specific key when playing with just intonation instruments.
For monitoring, I prefer my Seiko analog tuner, which also has the advantage of pass-through while it's on (that eats batteries, though). Also for being able to easily change the reference pitch, including to baroque pitch, 415 Hz. (This is incidentally also what Jimi Hendrix used most of the time, so if you want to play over a JH record, using a Polytune guarantees that you'll sound off.)

Again, YMMV. If the Polytune is good for you, great. I can't see it being useful for anyone for monitoring purposes, though.

Watching a tuner go up and down while I perform is way down on my priority list.
I only care about how it behaves when I'm actually tuning.
In that respect the TCs are exemplary.

When I'm singing and playing and foot-switching and listening to the boys for the cues ...

Well, I got other stuff to do is all I'm saying.
