I have a 2014 Limited Edition American Channel-Bound Tele. According to Fender, the neck is finished with a hand-rubbed oil. What oil does Fender use?

Chances are good that it's boiled linseed oil, but call Fender Consumer Relations and ask. Also never put boiled linseed oil on a rosewood fretboard.

I have heard/read that on multiple occasions...pardon my ignorance, but why? What does it do?

Because it is a wood finish and it's most common use is on fine gunstocks. It will clog the pores of the rosewood and may get gummy and sticky and require sanding.

I use Music Nomad's F-One Oil on my rosewood fretboards. It's excellent in every way.
