I've been wondering about this all week and from the research I've done, it occurs to me that 'Bobbins' is the thing the wire is wound around in a pick-up.
Am I correct on this?
Then I start thinking, what is the main difference in sound characteristics whether an fiberboard or plastic bobbin is used?
And is there any differences between grey or green fiberboard?

Yes, the bobbin is what the wire is wrapped around. The fiberboard holds the magnet/pole pieces in place and the wire is usually wrapped right against the pole pieces (some makers might put paper around the magnets first). The pole pieces in the pups with plastic bobbins are completely encased in plastic, so the wire isn't right up against the pole pieces (check out the Stew-Mac web site to see the raw pieces and a simple way to wind your own).

I suppose the difference in "radius" between the two types of pups makes a little sonic effect, but what that might be, I dunno. The variability in the winding (tightness and scatter pattern) probably makes more difference than grey or green or plastic.
