So, now that she's been re-wired by a pro, as suggested by Martian! (thank-you!)
She sounds much more normal. Not to mention the action and intonation are finally coming together!
My favourite guitar to play DESPITE having a bad nut that should be replaced soon. I have Fender blanks already.
All in all this has been a great success and I know what I need to do to greatly improve my soldering (new tools, techniques and practice!)

Thanks for the help guys!

Umbra, I have been soldering electronic things for nearly 40 years so I feel I can offer a couple of tips, free of charge and worth every cent. ;)
1. Use rosin core solder, never acid core. (acid core is for plumbing)

2. Always keep your soldering iron tip clean, keep a damp sponge handy for this.
Clean the tip, then tin the tip, then solder. Repeat each time you solder something.

3. Use the proper wattage soldering iron for the job. Those little 20 watt pencil irons
are great for smaller gauge wires like those found in guitar cavities, but you need
60 or 80, or even a 100 watt gun to solder the tabs on potentiometers to the pot
bodies. If you try and use a low wattage iron, it takes too long to heat the metal
and heats up the entire pot.

4. Practice makes perfect, and have fun!
