Pros and cons? Ideas?

I play 70's bluesy rock n' roll. i.e. Led Zeppelin, AC/DC, The Doors, etc.

The Fat 50s are your best bet of the trio of sets you've cited as the other two are way too bright. Frankly, based on the style(s) of music you play, you may want to consider Texas Specials ahead of the Fat 50s.

Texas Specials were practically made for bluesy rock and roll.

I love the Tex Mex pickups, but to me, they're more of a vintage-style pickup with a little extra oomph.

Presuming you mean the genuine Pearly Gates and not the Pearly Gates Plus, yes with the PGs having a much better top end. They're kind of like the TSs and the TMs rolled into one.

The Pearly Gates Plus is closest to a slightly overwound Duncan 59 with of course, too much bass, a scooped middle and an 'uninspiring' but present high end.

As always, this is merely IMO where YMMV.

Full sized HBs vs. single coils are two totally different entities. If you want your Strat to sound like a balanced SG, go with the Pearly Gates. If you want your Strat to sound like a 'beefy' Strat with 'attitude', go with the TSs. If you want your Strat to sound like a 'regular' Strat with just a bit of 'attitude', go with the TMs.

Not to confuse the issue but if I perceive your requirements correctly, they are the same as mine. In my Strat, "The Fratocaster" (I love plugging this guitar), I have all Seymour Duncan single coils in it: An SSL-2 in the neck, an SSL-6 in the middle and an SSL-3 in the bridge. I get 'bells', 'balls' and everything in between. You may want to consider this trio.

Like I said earlier, I like to play bluesy 60's and 70's rock n' roll, so a bluesy sounding pickup or humbucker is what I'm going for. I just don't want people to hear my guitar and immediately think "Oh, he sounds like Billy Gibbons, or SRV, etc." I just like that straight up blues sound. Texas Specials sound like the pickup for me.
