A lot of things contribute to that tone -- it's not just the pickups.

Part of it is the wood in the body and the neck. Part of it is that the bridge pickup is connected to a tone control. Part of it is that he's playing with the volume rolled down.

A big part of it is the excellent touch he has -- see how his picking hand is moving closer to the neck to darken some notes and moves closer to the bridge to brighten other notes? And part of the sweetness is fingerpicking instead of flat picking.

That guy could get similar tones out of any good set of Strat pickups.
