I think I already know the answer to this but I'm posting it anyway.

Single coils are simple, just change the plastic pickup covers.
Is the same true for my humbucker? I think they are glued on correct?

Right, to get a new color for your humbucker you usually need to get a new humbucker.

You cannot change the color of your pickup per se, but you can put a cover on it. Open coil pickups like the one in the top photo is not a cover, its actually the bobbin. That top part you see cannot be removed. But you can put a cover over it. Most people are familiar with the silver covers that Les Pauls have. You can get all sorts of covers, white, black, silver, gold, custom, etc made of plastic or metal. Typically a cover has some melted wax put in it and then the pickup is pressed in until it cools. Then you solder the sides with a dab of solder and its ready to go. You should raise the screws before this process to make sure it goes in the right place. Also, make sure you get the correct cover if it has holes for the screws.
