I was looking at pictures of the new Squier Jaguar. In the sunburst picture, it kinda looks like the body isn't a solid piece of wood, but 3 pieces stuck together... is that really what it is?

Very few guitars (or other instruments; check e.g. violins, cellos...) are made from one single piece of wood. In many of the high end guitars, "book matching" (back to back to get the grains & figuring on each side match) is considered luxury.

Two-piece, three-piece, five-piece, even laminated bodies play fine if the guitar otherwise is OK.
