I have an opportunity to get a set of custom shop texas pickups. Is there any way to tell if they are genuine custom shop pickups? Thanks.

If they were bought as a set to upgrade a guitar, they should have Custom Shop stickers on the bottom. No stickers...well they could have been pulled from a guitar where they were original equipment, but more difficult to establish that they are genuine.
Middle pup is reverse wound, reverse polarity, so you could check that.

Yep cloth black and white covered wires for bridge and neck and usually yellow white cloth for mid.
The neck should have a blue dot on the back of the second magnet and the bridge a red dot in a similar spot.
