I am loving my Masterbuilt Eric Clapton in olympic white but the scratch plate has always bugged me. I am thinking of fitting a white or pearl 3-ply in it's place.

Whilst viewing various items on eBay I have noticed a choice between 3 and 4 ply and also '57 or '62 model fit.

Could you help me out and guide me to what is the ideal variant to purchase.

Thanks in advance and have a great day!!!

Your guitar would use the '57 model (8 pickguard screw holes). The ply would be up to you as this also dictates the thickness of the plate where needless to say, even the 3 ply would be thicker than your OEM one. Having said this, I don't know what brands you are looking at on e-Bay but I caution you that some brands are better than others in terms of an exact fit of the screw holes lining up, etc.

I once had an EC Strat myself and wanted a 3 ply tortoise guard. I bought it direct from Warmoth products and it was a flawless, perfect fit. You might want to consider them:
