I have a champion 40. Would the 100 be MUCH louder, or only able to play loud without breaking up? I'm asking due to beginning to do gigs in backyards.

I own a Champion 100 and I think its a fine amp. I'd use the Twin Reverb voice for clean headroom.

Technically 40 watts to 100 watts is only aprox + 4 dB increase, but who uses an amp at max wattage output anyway? Seems to me it has to be louder. I'd like to think the 2-12" speakers would help. But it's an open back cabinet, (having read somewhere lately that a closed cab might be better outdoors?)

Not sure how loud you need it? Can the rest of the band turn down,,,,, Perhaps you can split your guitar signal using a pedal (two outputs) and use two amps for more volume.
