I have a 2013/14 65 deluxe reverb reissue. I am interested in buying a 1x12 cab or a 2×12
Cab for live shows. The amp I have now has 1 Jenson speaker and it sounds great but I am thinking about experimenting with different speakers to go with the cab. Any knowledge or experience in this matter please chime in.

I use a four ohm Vibroking-king cab. I replaced the two V30's with G12H Heritage . Sounds great! I have the DRRI head and it's a perfect match!

An 8 ohm speaker. The amp description says there is an external speaker jack, use that with a cab (8 ohm cab) and disconnect the internal speaker ?

Matt, I'm not sure about that. Hopefully one of the amp guru's will shed some light on using the internal speaker and external cabinet together.

The amp can use the internal speaker simultaneously with an external cab. In this scenario, an 8 ohm external cab would be ideal, but a 4 ohm or 16 ohm external cab could also be used.

Internal speaker with an external cab of 4 ohms = 2.66 ohm total speaker load
Internal speaker with an external cab of 8 ohms = 4 ohm total speaker load
Internal speaker with an external cab of 16 ohms = 5.33 ohm total speaker load

As you can see, not a lot of difference when using the internal speaker with various impedance external cabs, and all are perfectly acceptable.

Ok so let's say I build a 2×12 8 ohm cabinet
All i would need to do is run a cable from the external speaker jack on my amp into the output jack of my 2×12 cab and I will be able to utilize all 3 speakers?

I had a DRRI combo I bought used. One day I made the error of unplugging the internal speaker and plugging in a Weber California Ceramic I had on hand. The sound was greatly improved, and I ended up selling the combo and buying the head. The new rig was better in just about every way: the sizzley top end was gone, the bottom was rounder, and the mids punched more. In addition, the amp was easier to move since I didn't have to pick it up all at once.

Here it is with one of my guitars, and my current favorite bass:
