I've noticed the effect of the treble and bass controls is pretty subtle on the vintage channel of my SuperSonic 112. For example, the bass control in the Vibrolux channel doesn't seem to do too much. Is this normal? I realize the Vibrolux/Bassman switch makes major changes in the tone.

Yes, you are right. Mine is like that also. The Vibrolux channel is all treble and not much low end, until you crank it up past 3 or 4 on the volume. At higher volumes the highs roll off and there's more bass, so the EQ is more useful. The SS is made to be played loud and sounds best when cranked at least halfway, which is LOUD. Not a bedroom amp.

I haven't cranked the clean past 1 due to playing in quiet venue & yeah, it doesn't do much at that volume with any T/B tweak. However, I can get a good crunchy drive sound out of the burn by setting the G1/G2=2-4 moving opposite dir T/M/B=6/2/3-6. It sounds better than any OD pedal & pretty good at low volumes.

I wonder if playing with an extension cabinet would allow me to increase the volume to get more sound at the same loudness as 1x12 at the same volume.

I have used a closed 1x12 extension cab with mine. Yes, it makes a difference, there's more low end and a fuller sound. In fact that's the only way I'll use mine live now because I play in a loud 4 piece band and the single 12" speaker doesn't cut it.

Actually, now I've gone to using my Twin Reverb, because I got tired of hauling around the SS and the extension cab.
