Got the Twin home, it was really nice ands sounds pretty good.

The red light pulses with the guitar sound, the harder I hit it the more it drops in intensity! It's not much but you can't help noticing it.

The speakers are original, made by Eminence - are they any good? I was considering to find a pair of 16 Ohm speakers and pull 2 output tubes to make it less loud.

Any other (easy to do) mods to make it even sweeter/smoother sounding would be appreciated too.

Let me save you some grief. I tried the "pulling two tubes and running a couple of 16ohm speakers in parallel" and brother let me tell you...... it's still too dang loud. I ended up putting the two tubes back in and keeping the two 16 ohm speakers in the amp. The stock eminence speakers sounded decent until I installed two 198X pre rola celestion speakers. Warmer and less harsh on the high end. Find a pair of speakers that you like and give them a try. You might be surprised.
For lower volume the only thing I found that works decent is using input two of channel two or either input of channel one. This gives a decent volume drop.

Thanks, I'll keep an eye open for some mellow 8 Ohm speakers.

Any good hints for mellowing the tone a bit with change of preamp tubes?

A good new tube with a bit warmer mids (more like the original 1960's Dutch Philips ECC83) is the Mullard 12AX7 RI. ONE BIG CAUTION, They are long plates. So try to buy them from someone who will test them not only for strength, but also being quiet.

I've used the new tung sol reissue 12ax7's, these are warmer and can help tame amps with alot of high end. The sovtek 12ax7lps, very nice with smooth breakup although I like the lps better than the regular 12ax7's for the sovtek. The JJ803s, these have a nice and chimey top end, i prefer the 803s to the 83. Bear in mind that the sovtek 12ax7lps and the jj803s are both long plates and will be prone to microphonics eventually, but boy do they sound oh so sweet.
My recommendation is to go to tubedepot.com and read through all the descriptions of the different preamp tubes available. Their descriptions are almost dead on. That's how I made my decision, I read the descriptions and tried quiet a few different brands and types till I found what I liked. I've tried jj83's, chinese gen 9, nos rca 12ax7's, as well as groove tubes but the three tubes I suggested are my favorites, with the chinese 9th gen coming in a close 2nd.
You'll find the most noticable difference in tone when swapping out the first preamp tube of each channel. And if you can, splurge on a very good phase inverter. Maybe even one with matching triodes. It really helps.
