this might be a silly question, but sound/tone-wise, how do you know a cable is crappy? (besides things like hiss, crackle, pop, etc). the reason im asking is how can you tell that a certain "bad/undesirable tone" is the result of the cable, rather than something else?
when does your ear know that this cable has got to go?

Only your ears can tell. You mentioned the obvious. Tone is really subjective. I usually at least bring my guitar and try a bunch of nice one's out. Low capacitance numbers is not a good thing for all people. It can depending on your rig sound a bit shrill. On my George L's, I noticed a a little better bottom end on my Strat and a little cleaner, tighter bottom end on my Supro. Just be sure they use nice quality plugs. The jacket on my George L's .250's is pretty stiff. I don't mind it at all, some folks can't stand it. It's all personal preference.
