I just picked up a grey carpeted fender hm2-12 "stereo ready" cabinet. I think hm stands for heavy metal. This whole "stereo ready" thing is confusing. Mono, it's 8 ohms. Stereo its two 16 ohms. i read that its more common to see stereo 8 ohms and mono 16. What advice do you have?

Also what type of amp would go well with this cabinet?

It means the speakers are each 16Ω drivers.

The "mono" mode wires them together in parallel.

so does this mean that I would need to have two amps at 16ohms driving them individually or one mono amp at 8ohms in parallel?

For a proper source-to-load match, yes.

It depends on the amp. Marshall stereo outs from one amp can handle it with no sweat.

I haven't picked up an amp yet for the cabinet. I was thinking the fender red knob twin chorus would go well with it. Anyone have any ideas for amplifier for this rare oddity of a cabinet?
