I would at least go NOS for the 5AR4 Rectifier Tube if you replace it. They're just built better than current production 5AR4's.

It's up to you. JJ's and Tung Sol are great tubes. I like them, you may not. If you're totally happy now, you can stick with the brand you have. I never gotten a GT that didn't eventually rattle in 6 months or less. I've had GT's fail in less than a year too. For me they just don't work out. I felt they had no character and sounded like an icepick in the forehead. The JJ's really smoothed things out for me. YMMV
There are no NOS tubes on either of those pages.

Edit: Ok I'm dumb. NOS isn't a brand. It's a type of tube... Are all of those tubes NOS tubes?

eurotubes only sells JJ's

The Tube Store also sells NOS tubes. That's where I buy them. You need to look through the site and find them. Google is your friend.

I think I might just go with the Tung-Sol 6l6GC-STR. Good choice? Or could I find a better JJ tube?

The Tung-Sols should arrive either today or tomorrow. Should I take the amp to a guitar shop and have them put them in/bias them or can I just pop those puppies in? I don't know how necessary biasing the tubes are.

I'd get the bias checked. Any time you change output tubes you should get it checked. It's pretty important for the life of your tubes and the overall performance and tone of the amp.
Can I still put them in? Like I'll put them in tonight and have them biased tomorrow. Or should I just leave it all to the shop?
