I have a Fender Concert II (112) with true channel switching that allows me to switch between a sparkling clean and a natural, dirty tone (gain 10, volume 3-4, master to suit). I also have a 1977 Twin with the push/pull master. I always avoided using the master given the advice of many. However, I have recently messed about with the Twins natural distortion capabilities such that I am delighted to stumble upon some great tonal possibilities. My question is: Can I use an AB or ABY box to emulate "true channel" switching in the 1977 Fender Twin?

Yes, I've used this technique many times.

I use a Radial Tonebone A/B/Y selectable-output footswitch. Bear in mind, the channels of your Twin Reverb are wired "out of phase" with one another which can cause weird truncated frequency response when using both channels simultaneously. The Tonebone features a built-in phase switch.

Likewise, you can use it to run a pair of amps in tandem.

For your safety, be certain that both amps are correctly grounded though.

I use my Radial for switching between a Mini Z and Bandmaster, or both on. Perfect recording setup - 2 906's over the cabinets, and a KSM27 room mic 4' back and 4' up.
