What is the difference between-
The small blue 200v caps with ITW stamped on them
and the longer blue molded ones everyone sells do these sound different/better?

it depends on what you are using them for, i would go with a higher voltage in an amp, they can see up to 3-500 volts

I like the blue molded coupling caps found in older Fender amps. I rarely swamp them out, unless they need to be.

Cool, the reason I asked is my amp has the blue caps but not the ones with molded written on them and the tech has left them in there are they the same sounding cap?

I prefer to leave vintage Astron and Mallory caps in situ unless there's a discernible problem with them.

Mainly just wondering why I have never heard of them mentioned and they look like origional caps in my 70's non master super reverb even the rubish brown turd get a mention.
If I had a camera I would put a pic up.

I cringe every time I open up a vintage Fender chassis only to find all of its beautiful Astrons, Mallorys, and Blue Molded caps replaced by those horrid orange gummy-bears and shapeless wads of black licorice!
