Only if you still have RFI issues (hum etc) would I still consider copper tape shielding the pickup cavities. Here's why I'd still consider it with RFI issues. The brass baseplates that are in the circuit only shield the back of the pickup and RFI can enter via the sides also! Of course RFI can also enter via the front even with the entire cavity shielded, which is why Leo put the chrome covers on. They help by offering some deflection and absorption. You can use the copper tape in combination with the brass baseplates with no conflict.

Also if the control cavity insert doesn't shield the entire control cavity and make contact with the metal control plate and there is still some hum, I might copper tape the entire control cavity also.

Sounds like yours is good though!

The fact there is no grounding channel to the pickup cavities is no real issue on this model because the brass shielding baseplates are actually in the ground circuit by design. However there should be a ground wire to the bridge. It has to be there, you just didn't see it. Loosen the bridge screws and lift the bridge up, it should be there.

The Orange Drop POLY version capacitor is a decent middle of the road cap, but I no longer use them. I use either the vintage ceramic disc or Sprague Vitamin-Q's or other paper in oil Vitamin-Q types with other brand names on them like Philco and Gudeman etc. I will concede that the Poly Orange-Drops are probably the number 1 replacement cap, but I am a person of extremes. I want a tone that is super clean or filthy nasty with grit. I got tired of the in-between Poly types.
