I just took everything off my bass. When I put the bridge back on and tried to string it, the strings looked to be too close to the body. They touched the 7th fret and does nothing but twang. Also, the strings get incredibly tight, to the point where they snap but are still flat.

what's the problem?

It seems to me that your bridge must be the answer. Make certain they are adjusted properly.

Another thing may be the neck. Did you touch the truss rod? It may be a good idea to make sure the neck is concave and not convex.

Other than that, I can't think of why it's doing what it's doing.

Guess:
The bridge saddles all flipped over?

It could be the neck is bending at the center so try loosening your truss rod a little, or the saddles on the bridge, the bolts adjusting the height might have moved
